Easy, soft cake mix cookies

About 12 years ago a friend brought a plate of the softest chocolate chip cookies to a party and wow, were they good! I just had to ask for the recipe. Turns out it wasn't a real recipe, but rather a boxed cake mix hack! They literally tasted like cake batter and chocolate chips and I guess it's because that is exactly what they are!

She made them with yellow cake mix and chocolate chips but since hubby and the kids are sprinkles fanatics, the first time I made them I had to make them with the confetti style cake mix. 

They were amazing! Here they are in all their 'taste like cake batter' goodness:

How to make cookies from cake mix

The recipe was simple. Add a few ingredients to a box of cake mix. Mix together by hand, put on cookie sheet and bake! How could this possibly go wrong? (spoiler alert...it didn't!)

Ingredients

• 1 box yellow cake mix
• 1 tsp baking powder
• 2 large eggs
• 1/3 cup vegetable oil
• 1/2 tsp vanilla extract
• lots of sprinkles (I used about 1/2 the bottle)

Directions

Preheat oven to 350. 

Mix the cake mix and baking powder in a large bowl. 

Whisk together the 3 wet ingredients in a small bowl.  

Fold the wet ingredients into the dry ingredients, mix well. 

Fold in sprinkles.

I rolled some into 1 inch balls and dropped them onto an ungreased cookie sheet. The rest I dropped directly into mini muffin tins.

I baked them about 7 minutes for the cookies, about 9 for the muffin tin. Don't let them brown...they get too hard when they start to brown. 

Now that you have the recipe down pat, lets get to the variations! 

You can pretty much use any flavor cake mix! If you use a chocolate flavor you can omit the vanilla extract. Actually, with any strong flavor, omit the vanilla. Or you could even switch it out for lemon or almond. 

In fact, yellow cake, almond extract and cherry chips are one of my favorite combos!

My daughter made these yellow cake and butterscotch chip cookies for Thanksgiving this year. She made red velvet with chocolate chips for her Friendsgiving party also. They were both a big hit!

You can stir in chocolate chips, nuts, sprinkles or even candy pieces like toffee. You can pretty must make these whatever flavor you want!

For all the cooking and baking I do I certainly appreciate a easy-peasy recipe like this one! Especially with the busy holiday months fast approaching!
