I decided to adapt my favorite mini Oreo cheesecake recipe to use this flavor instead of the original chocolate and after tweaking it a bit.....I came up with this super easy Golden Oreo mini cheesecake recipe.
Golden Oreo Mini Cheesecake Recipe
The best thing about this recipe is that it's a small batch, but can be doubled. I prefer the small batch though, because I'm the only one eating these things and I don't need to be making a bunch!Ingredients:
- 21 Golden Oreos, 14 left whole and 7 coarsely chopped
- 1 package cream cheese (8 oz) softened
- 1/2 cup granulated sugar
- 1/2 tsp vanilla extract
- 2 large eggs, lightly beaten
- 1/2 cup sour cream pinch of salt
Directions:
- Preheat oven to 275°.
- Put a muffin liner in each of 14 muffin tins.
- Put 1 whole cookie in the bottom of each.
- Beat cream cheese with an electric mixer at medium speed till creamy. About 1 minutes.
- Gradually add sugar, beating until well mixed.
- Slowly add in eggs and vanilla.
- Continue mixing, adding sour cream then salt.
- Turn mixer off and stir in chopped cookies by hand.
- Divide batter evenly among muffin tin.
Bake about 20 minutes or until almost completely set. Place on wire racks to cool. Refrigerate overnight before serving.
For a richer vanilla flavor, you can make your own vanilla extract quite easily.
