This cucumber salad is a little different then anything I've had before. It's lighter and more flavorful. Everyone asks for this recipe and it's really quite simple. There are only 4 ingredients....and the surprise is the type of vinegar I use!
I would love to say this is my own recipe but I got it years ago when I worked for a little restaurant in Pittsburgh. I tweaked it a bit (took out the preservatives and extra salt) added an herb or two, and made it as simple as possible. Ok, so maybe it is my recipe now. lol
Cucumber salad with rice vinegar
Ingredients:
2 Sliced Cucumbers
1/2 Red Onion
1/2 cup Rice Vinegar
1/2 Tbs Fresh Herbs of choice (pick 1 or 2): Parsley, chives, dill, basil or cilantro.

You can peel your cucumbers if you like. I prefer to peel away some strips and leave some peel behind. Slice to desired thickness. Dice red onions, adding more or less to taste. Place cucumbers and onions in glass or plastic bowl (I avoid metal with vinegar. Certain metals will react over time ruining the bowl)
Chop fresh herbs and add to bowl. Pour rice vinegar into bowl and toss lightly to coat. Refrigerate for at least an hour. Toss again before serving. Serve cold. Will keep in the refrigerator for 3 days.Isn't that simple? Of course it's the rice vinegar that makes it so unique and flavorful. I don't add salt but some cracked white pepper might be nice if you like that. As you can see, it's also easily customizable. I often mix in diced peppers and tomatoes just before serving (although it doesn't keep as long with tomatoes included).

I have a coleslaw recipe that calls for rice vinegar. Love the taste, so I bet this would be great!
